Lemon Sheet Cake

INGREDIENTS

* 1 (18.25 ounce) package lemon cake mix
* 4 eggs
* 1 (15.75 ounce) can lemon pie filling
* 1 (3 ounce) package cream cheese, softened
* 1/2 cup butter or margarine, softened
* 2 cups confectioners' sugar
* 1 1/2 teaspoons vanilla extract

DIRECTIONS

1. In a large mixing bowl, beat the cake mix and eggs until well blended. Fold in pie filling. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 18-20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
2. In a small mixing bowl, beat cream cheese, butter and confectioners' sugar until smooth. Stir in vanilla. Spread over cake. Store in the refrigerator.

Mom and Dad's Farewell to NY party

Well, no matter how hard we try, Mom and Dad are still determined to move back to PA. Even adding two more grandchildren to the family didn't work *sigh*. So, even though we want them to stay, we thought we'd have a party to send them off properly and to wish them all the best in this new chapter in their life. Plus, its a very good reason to feast on yummy food and cake *wink, wink*.

March happenings

It's been a little hectic around here lately and my poor blog is paying the price. So, let me attempt to catch everyone up what's happened this month.

I returned to work on March 10th. Ugh. Maternity leave went by WAY TOO FAST. And, all I have to say about that is "THBPBPTHPT!"

A few Sundays ago we had gorgeous weather, so we decided to pack up and head north to Saratoga, That's where we snapped these pictures.





We spent one weekend at Brad and Shelley's. We were greeted with "Brad's Creme Brulee". It was yummmmy! We also helped celebrate Ava's 7th birthday while we were there. I can't believe how big the kids are getting. I remember when Ava looked like this ...

Welcome Emma Mary Mantey!
On March 22nd my sister had a beautiful baby girl. She joins her big bro Jacob [12] and big sis Amelia [3]. We're all very happy she's here :)

CHICKEN-A-GO-GO

This is what I found this morning when I came downstairs. As hard as I tried, I just couldn't convince chicken to stay. He didn't say where he was going, but he said that there was a clue in this picture. Check all packages before bringing them into the house. He's a sneaky one ;)
